Super Bowl Keto Style

Last week I wrote about a system I will be following for the next couple of months to make my Keto lifestyle more of a habit again instead of falling off the “wagon” all the time. So far so good! I completed the first tier, the 3-day cleanse and now I have started the second tier. Tier 2 is described as an accelerated 21-day Keto Comfort Diet.

Progress – Right now I am on day 2 of tier two. I have no cravings, no hunger between meals and I have lost 4.6 lbs. I was already in ketosis when I started the cleanse, so I didn’t get the keto flu that is sometimes experienced. I have even stayed motivated all week and completed my goals in the studio getting over 200 pairs of mittens cut out, matched and ready to sew!

Here is an example of what our menu looks like for this week.

 

No Breakfast during this tier – Fast till lunch – can have – black coffee, green tea, lemon water, water.

Day Lunch Snack Dinner
Friday Tuna Salad If you need one you can have Cajun Fish “Tacos”
Saturday Fried eggs,bacon and Spinach one ounce of cheese Steak, Asparagus and roasted Radishes
Sunday Tuna Salad 2 hard boiled eggs Jalapeno poppers + Keto Pizza
Monday Cheeseburger Salad and many more Keto meatballs and Pasta
Tuesday Leftover Salad listed in the book Mushroom + Cauliflower Risotto
Wednesday Tuna Salad Ground Pork Ramen
Thursday Leftovers Chief Salad

 

It is Super Bowl Sunday tomorrow so our dinner that day is a fun finger food meal. Both are my recipes so I can share them with you. The rest are in the book Rocco’s Comfort Food Diet.

 

 

 

Keto Pizza

I have worked on a pizza crust recipe for a long time and here is what I am finally happy with. It is so good and satisfying that my husband loves it too. You can actually pick up a slice and eat it with you hands, which as anyone who has tried keto crusts before know, is amazing!

My Keto Pizza Crust

3 eggs

1/3cup ground flax seed

1/3cup coconut flour

1 tsp baking powder

½ tsp salt

2 tbsp olive oil

  • Whisk eggs and then mix in all the other ingredients. It will be runny
  • Line a round pizza pan with greased parchment paper
  • Pour the mixture onto the pan an spread it out by tilting the pan until it is spread out evenly
  • Bake at 375 degrees for 20 min

Add your sauce and toppings and bake till desired doneness.

Enjoy!

Keto Jalapeno Poppers

1/2 cup full fat cream cheese

1/3 cup shredded cheddar cheese

¼ tsp chili powder

¼ tsp garlic powder

6-8 Jalapeños sliced lengthwise and seeded

6-8 slices of bacon halved

  • Preheat oven to 400 degrees
  • Blend together cream cheese, cheddar cheese and the spices
  • Fill each jalapeño half with the mixture and wrap each in a piece of bacon
  • Put a wire rack in a sheet pan and line the filled pepper on the rack
  • Bake for 15-20 min until the bacon is brown and crisp

This week I am going to try out some keto tortilla chip recipes and try and work on one that I like, so hopefully I can share a successful one with you next week.
