Favorite Finds

Even though craving feelings happen very often if you are in ketosis, there are things that I have missed. I know it is just all in my mind and not actually my stomach or body asking for it, but the mind is our biggest hurdle isn’t it.

Saturday morning pancakes with butter and sweet syrup, the smell of fresh baked bread and a toasted tomato sandwich. Hmmmmmmmm

Mind Cravings satisfied! I am going to share with you a couple of recipes I have been playing around with and that finally word to satisfy and a couple of finds that complete it.

Pancakes – I have tried a couple of Keto Pancake mixes, but something was just not right. Texture, taste or smell, I could not put my finger on it. Great in a time pinch but not that lazy Saturday morning pancake stack feel. So, I experimented with my “chaffles” recipe and found out if I made it a bit thinner and added cinnamon. Oh, my yes! The only thing missing was syrup. You can find lots of sugar free syrups on the site I mention later but on Amazon I found a made in Canada company that makes a sugar free syrup that tastes like actual pancake syrup. Steeves Maples made in New Brunswick. It is sweetened with sucralose which if you follow me you know I really don’t like because too much can totally throw you out of ketosis. I will keep looking, but for now it will do (did I mention it’s made in Canada!)

Pam’s Pancake Keto Style – serves one (3 small pancakes)

  • 1 egg
  • 1 tbsp almond flour
  • 1 tbsp mayonnaise
  • 1 tsp baking powder
  • 1 tbsp brown sugar cinnamon Skinny Syrup
  • 1 tbsp water
  • Dash of cinnamon

Mix and make in your chaffles iron or flat top.

Top with real butter and the sugar free pancake syrup and enjoy!

 

Baked Bread– this one has been an ongoing journey of experimenting for a while now with many fails. I am still trying to make a keto tortilla recipe that we like and has a good texture, but I finally have a keto bread recipe that fills the house with that fresh baked bread smell, looks and tastes like real bread. Well, the closest thing you’re going to find while still staying strict keto.

*makes one 14 slice loaf, 122 cal and 1 net carb per slice! Make it into a breakfast or snack bread by adding 2tbsp of your favorite sweetener and ½-1 tsp cinnamon.

Pre heat oven to 375 degrees F

  • 6 eggs
  • 1/3 cup olive oil
  • 1/3 cup warm water
  • ½ cup coconut flour
  • ½ cup ground flax seed
  • 1 tbsp baking powder
  • 1 tbsp active dry yeast
  • 1 tsp xanthan gum
  • ½ tsp salt

In a bowl put active yeast and warm water and let bloom

In a separate bowl whisk the eggs and oil and then whisk in the water and yeast.

Add all the remaining ingredients and whisk until incorporated. It will be like a batter bread consistency.

Line a loaf pan with parchment and pour in the batter.

Bake for 35-40 min or until a toothpick comes out clean.

Transfer to a wire rack to cool.

 

*I have toasted and grilled this bread with success*

Recently I ordered the book “Rocco’s Comfort Food Diet” by Rocco Dispirito. I thought it was just a cookbook and I had not yet bought an actual keto cookbook. But it is his journey and diet plan into the keto life. The recipes themselves are simple with ingredients that are in any grocery store, but they are from a great chef who wanted comforting options. Next week I will get into more specifics as this book is going to be my outline for our February meal planning.
