Movie Night Keto Style!

We love having a cozy movie night, especially when it cold and snowing like it is tonight.

Just because we have a keto lifestyle doesn’t mean we can’t have fun food!

Here are two of our favourites to have on nights just like this ……

First

We love tacos! When I say love, I mean we could eat tacos for breakfast , lunch and supper every day of the year!

A chaffle is a small waffle that is made keto style that you can use as a bun, taco shell, layer them for a layered cake or as sandwich bread. You can change up the flavour with spices, a sweetener, cocoa powder or cheese. 

Wonder Bread Chaffle

1 egg

1 tbsp. almond flour

1 tbsp. mayo

1/8 tsp baking powder

1 tsp water

Makes 2 mini chaffles

**if you don’t have a mini chaffle maker you can use a regular waffle iron**

I like to make enough so we have left overs for the next day.

For tacos, as you are making the chaffles, put them on a parchment lined sheet pan and put in the oven at 400 to keep them warm and crisp them up a little

As you are making your “taco shells” get your fillings all together and prepped. The sky is the limit! On a Friday movie night I look in the fridge and basically make tacos out of left overs from the week.

  • cooked chicken
  • cooked ground beef
  • sausage
  • shredded cheese
  • jalapenos
  • shredded lettuce
  • queso
  • salsa
  • sour cream

You get the idea, nothing is off limits when it comes to tacos, well almost nothing lol. I’ll get into different taco recipes another day.

You are ready to construct your delicious, scrumptious tacos, Enjoy!

 

Second – Nachos

Who doesn’t like nachos, well not many people ok!

When living a keto lifestyle you begin to think about food differently. I crave the flavours of my favourite foods and not all the actual components. That is where this creation came from (and a search on Pinterest)  

Sheet Pan Nachos

The original post of this (which I will give you the link to below) was called “Naked Sheet Pan Tacos” I found it satisfied my craving for nachos so that’s why I renamed it in my favourites. What you call it is totally up to you haha.

Ready , Set, Start!

  • 2 1/2 lbs ground beef
  • 1 cup chopped onion
  • 1/4 cup taco seasoning or 1 pkg (if you are keto read the carb count many are different)
  • 1 tbsp salt

Preheat oven to 400

Mix together the above ingredients

Spread this meat mixture on a parchment lined sheet pan in an even layer and bake for 20min

Drain off the grease and top the meat with shredded cheese (sometimes I use queso if I have)

Bake for another 8-10 min till all melted

Remove from the oven, and  cut into squares or triangles.

Top with all of your go to nacho toppings

  • shredded lettuce
  • chopped tomatoes
  • jalapenos
  • olives
  • avocado
  • salsa
  • sour cream
  • sauted vegetables

The original has you put on all the toppings and then cut, but here everyone likes to do their own so I cut it up and serve it as a blank slate to top.
