Copycat Keto!

Have you ever seen a dish on a tv show, billboard or in a restaurant that you just can’t get out of your head? It happens to me all the time and this week was no exception.

I am four weeks into my 6 week keto reboot and I have been making an effort to really stick to it but have fun with it at the same time.

While grabbing a quick coffee on one of my delivery days I saw a poster for a new breakfast  “French Toast Breakfast Sandwich” . In my head I could smell the sugary salty goodness and my mouth was watering I won’t lie, but will power prevailed and I left the drive threw with coffee only.

Not being able to get the image out of my head I woke the next morning with a brunch plan. I am very rarely a breakfast person and usually just have a shake, bulletproof coffee or fast till 11am and have an early lunch.

So here is my version

French Toast Bacon & Egger -Keto Style

French Toast Chaffle ( makes 2-top and bottom)

Between the delish Chaffles

  • 1 fried egg
  • 1 slice of bacon cut in half and cooked
  • 1 slice of cheddar cheese

Get out your mini waffle maker and preheat (this is the one I have ) https://www.amazon.ca/dp/B01M9I779L/ref=twister_B0713RM462?_encoding=UTF8&psc=1

  • mix all your chaffle ingredients
  • pour half the batter in your mini waffle maker at a time
  • cook your batter to make you “top and bottom bun”
  • put your breakfast sandwich together

Last thought before we let the weekend begin.

Food will always be in our lives, we kinda need it to survive lol. So have fun with it! Don’t think of it as your enemy. Make it into something that you feel no guilt over and that you look forward to mealtime again.
