A couple weeks ago I hosted a baby shower for our daughter. It was midafternoon so I wanted to keep things light but with an indulgent feeling. My sister is celiac, and when I am a host, and someone has an allergy, I want everything to be able to be enjoyed by everyone. Because I follow a mostly Keto lifestyle this was very simple. We had pear, arugula and brie skewers with a balsamic glaze drizzle, keto candied pecans, some homemade peanut butter and caramel fill chocolates and Ceasar salad dip with veggies as the dippers. Well, the dip was such a hit that by the time the men joined there was nothing left. So, my husband requested I make it again for our Saturday lunch the next week. Our weekend meals are never “regular” and why should they be! Enjoy Life, have dip for lunch, charcuteries for supper or a big brunch spread to last you the day. But defiantly start with this.
Chopped Chicken Ceasar Salad Dip
- 1 brick cream cheese softened
- 1 cup mayonnaise
- Ceasar salad dressing mix **see below**
- 2 cups romaine lettuce cut into very fine ribbons
- 1/4 cup freshly grated parmesan cheese
- 1 cup finely chopped cooked chicken
- 1/2 cup finely chopped cooked bacon
In a medium bowl beat cream cheese, mayo and dressing mix until well incorporated and fluffy.
Spread this into the bottom of a 9×9 shallow baking dish or 9″ pie plate like I did here.
Top with the finely sliced lettuce, then chicken, then bacon and finally the freshly grated parmesan cheese. Freshly grated cheese has such a wonderful flavor that pre shredded ones just don’t have and is actually cheaper.
Serve with veggies for dipping like I did but would also be great with chips and or crackers.

**Ceasar Salad Dressing Mix**
My late father-in-law was a European trained chef and once looked in our fridge and shook his head. He said “why do you buy all these dressings and dips? If you have mayo, vinegar and mustard you never have to buy them again” I took that to heart, and we very rarely buy premade anymore. Now of course you need more than those three ingredients, but they are the base on which you can build great dressings, vinaigrettes and dips. This mix, you can use with mayo as a dressing or vinegar as a vinaigrette.
- 2 tsp Dijon mustard
- 3 garlic cloves, grated
- 1/2 cup grated parmesan
- 1 tsp Worcestershire sauce
- 3 tbsp lemon juice
- 2 tbsp olive oil
- 1/2 tsp each of salt + pepper
Mix well.
